Breakfast at our abode usually consists of an elaborate porridge of oats with various homemade plant milk, cinnamon leaf, vanilla and nutmeg. Delicious and packed with nutrition to start our day right. But sometimes we like to mix it up with something extra on the side.
Who doesn't love fried plantain? We sure do, especially the little person in the house. We like to eat them with real Vermont maple syrup. It's a good (and quick and easy) substitution for pancakes. And it seems we can eat endless amounts of these little golden gems.
