Breakfast at our abode usually consists of an elaborate porridge of oats with various homemade plant milk, cinnamon leaf, vanilla and nutmeg. Delicious and packed with nutrition to start our day right. But sometimes we like to mix it up with something extra on the side.
Who doesn't love fried plantain? We sure do, especially the little person in the house. We like to eat them with real Vermont maple syrup. It's a good (and quick and easy) substitution for pancakes. And it seems we can eat endless amounts of these little golden gems.

Pan-Fried Sweet Plantains

Description
Pan-fried ripe plantains are starchy and mildy sweet. Dip them in maple syrup for an alternative to pancakes.
Ingredients
- 1 ripe plantain per person
- Canola or olive oil for frying
- Maple Syrup
Instructions
- Peel and slice plantains into ¼ in slices.
- Heat a cast iron skillet over med-low heat. When hot, add enough oil to coat the bottom of skillet.
- Carefully add plantain slices to skillet so oil does not splatter up at you. Fry one side for 2-3 minutes until golden brown and flip over to fry for another 2 minutes.
- Transfer to paper towel lined plate to drain and cool.
- Serve warm with maple syrup. Enjoy!
