Recipe:
Grilled Creamer Potato, Onion and Rosemary Skewers
Servings: 4
Prep Time: 12 minutes
Cook Time: 24 minutes
.
Grilled Creamer Potato, Onion and Rosemary Skewers are an easy and delicious side dish to
make right on the grill. Pair them with grilled salmon, chicken or steak for the perfect summer
alfresco meal.
.
Ingredients:
1.5 lb bag The Little Potato Company Dynamic Duo bagged potatoes
1 large red onion
3 tablespoons extra virgin olive oil
2 tablespoons minced fresh rosemary
1 teaspoon kosher salt

1/2 teaspoon cracked black pepper

Method:
1. Preheat your grill or you can also roast them in the oven at 425˚F.
2. Add Creamer potatoes to a 4 quart saucepan and cover them with about 2 inches of cold
water. Bring the pot to a rolling boil and parboil potatoes for 4 minutes. Drain and cool potatoes
for about 10 minutes before handling them.
3. Meanwhile peel and chop the onion into large chunks, about 1” pieces.
4. Add parboiled potatoes and chopped onion to a large bowl and toss them in the olive oil,
minced rosemary, salt and pepper.
5. Skewer the potatoes and onions.

An epic grazing board should have a mix of textures, savory and sweet flavors, fresh and cured items, and a rainbow of colors. Edible flowers add an extra wow factor.
