Quick and Easy Pico de Gallo
Ingredients:
1 lb of tomatoes
3-4 oz red bell pepper (about ½ of a pepper)
3-4 oz green bell pepper (about ½ of a pepper)
3-4 oz red onion (about ¼ of a red onion)
1 jalapeño pepper (seeds removed if you don’t like it spicy)
1-2 tablespoons of fresh lime juice
1 teaspoon kosher salt
1 oz fresh cilantro (about 2 handfuls, stems on)

Instructions:
Cut vegetables in large chunks to about the same size
Add everything to a food processor and pulse until the salsa has reached your desired texture. Stop and scrape down the sides of the bowl as needed.
Taste for salt and heat. Add a pinch of cayenne pepper if you want it spicier.
Notes:
You can strain off some of the liquid if the tomatoes were very watery. Then taste and reseason with salt and lime if needed.
Best eaten the day it’s made but will keep covered and refrigerated for up to 3 days. Enjoy! ✨🌽🙌🏼😋
