I’m back with another quick and easy meal idea using Tommy’s Superfoods frozen seasoned veggie blends. So today I took the super easy route and combined their Root Fusion blend with their seasoned Brussels Sprouts for a hearty fall inspired dish. Yes, even food bloggers have days where we don’t have time to prepare and cook a healthy meal from scratch. The Root Fusion blend is a delicious mix of carrots, beets, Fuji apples and sweet potatoes lightly seasoned with herbs and spices. I combined these yummy roots with Tommy’s Brussels Sprouts seasoned with sweet red bell pepper and spices, and served it with avocado, coconut yogurt and a sprinkle of pine nuts. Perfect for lunch or a light dinner. (And a much healthier choice than take out pizza.)
